Antonio’s family hails from Calabria, Italy – a sun-baked region of rugged mountains, old-fashioned villages and dramatic coastline.

Moving to Australia at a young age, his mother and father kept the flavours and traditions of Southern Italy alive for Antonio and his two brothers through his mother’s cooking and long lunches with his extended family.

The food Antonio was raised on was simple Southern Italian provincial food, but it celebrated fresh produce and the harmonious combination of ingredients on a plate.

Verde is an extension of this ethos and a loving tribute to Antonio’s parents, his Southern Italian roots and the inspiration they provided. This tribute is reflected in Verde’s menu items, many of which are influenced by Antonio’s authentic family recipes.

Antonio’s parents taught of the importance of using only the best fresh produce in Italian cooking. In fact, Antonio’s mum supplies many of the ingredients we use at Verde from her very own backyard garden.

Antonio also uses a range of homemade sauces, vinegars and dressing on his dishes. In particular, Verde’s signature salad, the tossed leaf salad uses a special and secret homemade red wine vinegar dressing.
